Photography by Leah Itsines Lamb Yiros Ingredients 90g lamb strips, uncooked Sprinkle of salt & pepper 1⁄4 tsp oregano 1 small clove garlic, crushed 50g tzatziki 1 whole pita 1⁄2 medium tomato 3 large lettuce leaves 1⁄4 red onion Directions 1. In a small bowl, mix lamb strips with salt, pepper, oregano and garic. Leave to marinate for 20 minutes. 2. Heat a non-stick frying pan over medium to high heat. Add pita to the pan and lightly toast on both sides. 3. Place the pita in the middle of a large sheet of foil or baking paper and layer with tzatziki, lamb, tomato, lettuce and red onion. 4. Pull one end of the pita onto the middle and tightly roll forwards until you reach the other side. Grab the foil or baking paper and wrap tightly. Eat right away, or take to work!
