Aaron: I really enjoy the educational process with the customers. On those slower days you get people who are really interested in the product, I learn from them and they learn from me. How did you get started in the industry? Aaron: I’ve been in and out of ‘hospo’ since I was 17 (over 12 years). From cocktail bars at hotels to bars in London. I’ve also worked in the kitchen at Chianti on Hutt street. Josh: I studied engineering and worked as a mechanical engineer for four years. I discovered good beer over in scotland and fell in love with it. I wanted to change things up. myself and two others got together with the idea of a small six tap bar with toasties, but once we found this space we turned it into what it is. Three important qualities one needs in the industry? Josh: read your customer, have good knowledge of what you’re selling, and love for what you’re doing – be truly invested. Your signature drink? Aaron: We have an infuser at our bar. I like to put smoked hickory chips into it so it imparts a smokey wood and vanilla essence into the beer. Josh: A hoppy sour beer. I love a balanced list of beers – transition beers, craft beers and also those pours for the adventurous beer drinker.
